  • 3 shallots
  • 4 Grains of garlic
  • 150 Gr Peanut, Fry 
  • 2 tbsp sweet soy sauce (mashed nut mixture)
  • 2 tbsp sweet soy sauce/as needed (complementary during a presentation)
  • 2 candlenuts
  • 2 tsp brown sugar
  • 150 ml of water broth
  • 3 tbsp vegetable oil/fry
  • Salt to taste

Onion Sauce Satay Madura Chicken:

  • 4 cloves garlic
  • 10 Small red Chili Peppers
  • Salt to taste  

How to make Madura chicken satay:

  1. Peanut sauce: mix garlic, shallot, peanut, salt, and candlenut, puree. Heat oil, stir-fry until fragrant, enter the broth, cook, until thickened, lift. 
  2. Combine 2 tbsp of peanut sauce with 2 tbsp of sweet soy sauce, dip the satay, grilled until half cooked. Raise and roll back in the seasoning, grilled until cooked, lift. 
  3. Sambal Bawang: Heat the oil, stir fry garlic until half cooked, lift. Mix garlic, small red chilies, and salt, puree. 
  4. Serve the Madura chicken satay with peanut sauce, sweet soy sauce, shallots, chili sauce, lime, and white rice or lontong.
